Organic Rahi were animals within the Matoran Universe that were completely organic, with no biomechanical parts. Some Rahi in the Pit were organic. On Mata Nui, there were also some organic Rahi, like the Organic Bird. It is now known that animals on the surface of Aqua Magna were also completely organic.
