Ricotta (pronunciation: ri'coh-tuh) is an Italian dairy product made from sheep's milk whey that is left over from the production of cheese. Although it is commonly referred to as ricotta "cheese," ricotta is not a proper cheese as it is not produced by the coagulation of casein. The word ricotta, in Italian, literally means recooked.
