An eddy is a type of long, twisted pastry made with Zharan fangrass flour dough, filled with a sweet cream, and often topped with icing. The dough is piped into an oblong, twisted shape through a shaped hole and baked until it is crisp and hollow inside. Once cool, the pastry then is filled with a sweetbean- or chocolate-flavored pastry cream (Anczica: etigosza rosczkuuts), custard, whipped cream, or shachinut cream; and iced with fondant icing. Other fillings include pistachio- and rakia-flavored custard, fruit-flavored fillings, or sweetpith purée. The icing is sometimes made of caramel or stonemelon preserves.
