It is unclear which template the ears use, since neither of those templates have distinctive looking ears. Leon's SimDNA in SimPE shows that he carries the recessive allele for light blue eyes. Also his dominant skin tone range is for light skin, while his recessive skin tone range is for medium skin. However Leon's dominant and recessive alleles are for light skin.
