A latke is also known as a potato pancake. There are many recipes, but they all basically include grated or shredded potato, some kind of liquid (often eggs, oil or chicken fat) to hold it together and spices (just salt and pepper or something more interesting). The ingredients are mixed together, shaped into pancake patties, and usually fried until golden-brown on both sides, but some recipes use less oil and the latkes are baked. Traditionally latkes are made and eaten on the Jewish holiday on Hannukah, but they can be enjoyed at other times as well. For more recipes, see
