it depends what game you have and what console you have. most of the time you should just restart the game by rebooting a computer or cutting the power to a 360 In addition to that very very occasionally when the game freezes and you press the center button of the Xbox 360 controller(360 only obviously) you will bring up the normal dashboard menu which will often unfreeze the game.
