The liquid that is removed from sauerkraut and processed into a juice form. Kraut juice is used to season various food dishes or used as an ingredient to make a kraut beverage. Various meat dishes, brat marinades and sandwich sauces, such as sauces spread on Reuben sandwiches, use the juice as a way to season the flavor of the food being prepared. When used for a beverage, 1 part of kraut juice is often mixed with 4 parts tomato juice and seasoned with horseradish sauce or other seasonings for a spicy drink.
