Jam Cottage Pudding 1 cup jam or marmalade (any kind) 1 egg, well beaten 1 cup milk 2 t. melted butter 2 cups flour 3 t. baking powder 1 t. salt combine your jam, egg, milk and butter in a mixing bowl; mix well. Sift together dry ingredients; beat them into the first mixture. Oil a muffin pan and pour the mixture into the cups. Use another muffin pan, if needed. Bake at 375 for 30 minuets. Serve hot or cold with a plain lemon sauce. If you'd like, you can bake this in two layer pans, and put a layer of whipped cream between them. All measures in this recipe should be level.
